1 cup of well-chopped green beans (100g)
1 medium-sized zucchini (200g) well chopped
2 large potatoes (240g), peeled and coarsely grated
1/4 cup of chopped parsley
1/2 teaspoon of salt
2 eggs
1 cup of whole wheat breadcrumbs (90g)
1/2 cup of grated Parmesan cheese (55g)
Oil (for greasing)

In a medium-sized bowl, mix all the ingredients well with a wooden spoon
Divide the mixture into eight portions
On a smooth surface lightly greased with oil, shape each portion into a hamburger using an 8cm diameter cookie cutter
Heat a large skillet or frying pan over high heat
Brush it lightly with oil and reduce the heat to medium
Fry two hamburgers at a time until they are golden brown (approximately 2 minutes per side)
Place them in a serving dish and serve immediately
