Mix the butter or margarine with the flour, Parmesan cheese, and 1 egg yolk to obtain a smooth dough
Form small balls from the dough, shape into rolls by overlapping the ends, and form the roll-ups
Brush with the remaining egg yolk and sprinkle with paprika or sesame seeds if desired
Bake in a preheated oven at 400°F (200°C) for about 15 minutes, or until golden brown
Yield: approximately 600 g
To freeze: let cool completely in the baking dish and transfer to a freezer-safe bag, leaving space between each roll-up
Once frozen, place in an airtight plastic bag, remove air, seal with crepe tape, and return to the freezer
To thaw: remove from the freezer, let thaw at room temperature, and serve.
