1 1/2 kg of lizard
1/4 cup of parsley leaves - 20 g
1/4 cup of cilantro leaves
2 cloves of garlic - 8 g
1 pinch of Calabrian pepper
2 medium carrots cut into pieces - 250 g
Salt to taste
4 soup spoons of olive oil - 60 ml
1/4 cup of vinegar - 60 ml
1/2 soup spoon of cumin
2 tablespoons of water
1 soup spoon of wheat flour - 10 g
1 1/2 kg of lizard

1 soup spoon of wheat flour - 10 g
Clean the meat
With the aid of a sharp knife, remove the "hollow" from the meat, leaving a border of about 2 cm
Season with salt to taste and reserve
Process the removed meat together with parsley, cilantro, garlic, Calabrian pepper, carrot, and salt in a food processor (or blender) to obtain a homogeneous mixture
Stuff the reserved meat with this mixture and sew the edges
Heat the olive oil in a frying pan and fry the meat until it's golden brown on all sides
Place the meat (without the olive oil) in a pressure cooker without sealing and add the vinegar and cumin
And then cook until the liquid evaporates
Add water, close the pressure cooker, and cook for about 50 minutes over low heat, once it starts to boil, until the meat is tender
Remove the meat from the pot and strain the sauce through a fine-mesh sieve
Return it to the pot, add flour dissolved in a little water, and cook until thickened
Cut the meat into slices and serve with the sauce
Serve accompanied by tomato slices passed in breadcrumbs and fried
Serve 8 portions.
