2 ripe tomatoes diced
salt and black pepper to taste

Squeeze the shrimp with lime juice
Combine in a pan the olive oil, shrimp, onion, parsley, coriander, and tomatoes
Fry for a bit until the onions are tender
Add salt and black pepper and simmer on low heat
Add the coconut milk and continue cooking for an additional 10 minutes, stirring constantly
If desired, thicken the sauce by adding 1 tablespoon cornstarch
Serve with dry white wine.
