500g medium shrimp

Clean the shrimp and reserve
Rinse the heads and shells and place in a pot with water
Bring to boil and let simmer for 15 minutes, with the pot slightly ajar
Strain through a sieve and pour the broth over the bread slices
Melt the butter with olive oil
Fry the onion along with garlic until soft, but not browned
Add the bread soaked in shrimp broth, season with salt and pepper
When starting to simmer, add the shrimp
Cook for 3 minutes
Add cilantro and serve hot in shallow dishes
Serve 6 servings.
