2 kg of lobster
2 tablespoons (of oil) of olive oil
1 medium onion, chopped
6 tomatoes, peeled and seeded
4 green onions, chopped
3 stalks of parsley
salt to taste

Bring the lobster to a boil with plenty of water and salt to cook it
When it's red, remove from heat
While still warm, carefully remove the shell and reserve it
Remove the gut
Unravel the lobster meat into thick strips
Reserve it
In a skillet, sauté the olive oil, onion, tomato with green onions and parsley
Cover the skillet and cook over low heat for 15 minutes
Add the lobster, mix well, and cook for a few more minutes to warm it up
Season with salt to taste
Remove from heat and arrange the sautéed mixture in the reserved lobster shell
Serve with white rice
