1/4 cup of brown sugar
1/2 cup of orange juice
12 orange peels

In a bowl, combine the mashed sweet potatoes, butter or margarine, brown sugar, and enough orange juice to achieve a consistent sweet potato purée
Spread over prepared orange peels
If desired, garnish with a maraschino cherry
Keep warm over simmering water or bake at low temperature (150°F) for 30 minutes
Serve as an accompaniment to roasted meat
