Combine the melted butter with the sweet potato, add the grated orange zest and orange juice, pineapple, and salt
Place the mixture into orange shells (cut off the top of an orange and remove the pulp)
Dust with cheese and paprika
Place in a refrigerator-proof dish and cover with aluminum foil
Bake at moderate temperature for 30 minutes
Remove the foil, dust the oranges with shredded coconut, and bake until lightly browned
