With a serrated knife, cut a thin slice from the orange where its pith is removed
After that, with the same knife, make zigzag cuts along the entire edge of the orange
Then, carefully remove all the pulp from the orange and chop it
Mix the chopped orange pulp, nuts, raisins, and two tablespoons of sugar
Fill the orange shells with this mixture
Place them in a baking dish and add a finger's width of water that should surround the bottom of the oranges
Bake in a slow oven for 40 minutes
While doing so, beat the egg white to snow and add two tablespoons of sugar
