Seasoning
1 1/2 cups soy sauce-based marinade
1/2 cup dry Madeira wine
3 tablespoons chopped garlic
4 tablespoons honey
1 tablespoon Ajinomoto seasoning
1 tablespoon salt
1/2 tablespoon black pepper
2 cloves crushed garlic
Rehearsal:
3/4 cup unsalted butter, softened
1 cup chopped onion
1 clove crushed garlic
1 cup chopped parsley
2 cups diced pineapple
1 cup diced mango, seeds removed and cut into small cubes
1 small papaya seedless and cut into small cubes
1/2 tablespoon black pepper
7 cups boneless chicken breast, cut into small cubes

7 cups boneless chicken breast, cut into small cubes
Mix all seasoning ingredients
Place some on a baking dish
Place the leitão in the baking dish and drizzle the remaining seasoning mixture over it
Let it rest for 2 hours
Prepare the filling: melt butter, sauté onion, garlic, and parsley
Add fruits and seasonings
Moisten well
Add chicken cubes and mix gently
Stuff the leitão and bake in a moderate oven, basting occasionally with the seasoning mixture and the pan juices.
