Soak the lentils in cold water overnight
Drain and transfer to a pot
Cover with cold water and add salt and black pepper
Bring to a low heat
Meanwhile, fry the onion in hot olive oil, stirring constantly until golden brown
Add the onion to the pot and cook with the lentils
Let it simmer until the lentil is tender but still firm
Adjust the seasoning and remove from heat
Let it cool, then refrigerate until serving time.
