Wash the pineapple thoroughly before peeling, chop the peel and place it in a copper bowl
Make a thick syrup with the sugar and pour it over the peels
Add the grated pulp of two oranges and the syrup from one, then cover with a cloth
Let it sit for 5 or 6 hours
Strain through cheesecloth without pressing and add the alcohol
Add an egg white and mix well, then let it sit for 24 hours
Strain using a piece of cotton gauze in a funnel
Filter using paper filters, and you'll get clear liqueur
It's worth the effort
Bottle it up and start using after 10 months (if you can wait).
