Clean and thoroughly wash the tongue
Cook it with water and salt for 40 minutes in a pressure cooker, or about 2 hours in a common pot
After removing from heat, strip off the thick skin that covers it
Saute all seasonings with a little olive oil for a few minutes
Then add the tongue and wine
Let it simmer on low heat until it's well cooked and tender, adding water as needed to prevent sticking
When the tongue is well cooked, let it cool down completely and slice it
The sauce can be used for sandwiches by whisking it with a little more cornstarch and adding grated cheese outside of the heat.
