Preheat the oven to 250°C (hot)
Place the fish in a greased baking dish
Season with garlic, cilantro, ginger, lime juice, and salt
Distribute the onion slices over the fish and drizzle with olive oil
Cover with aluminum foil and bake for about 30 minutes, or until the fish is cooked
Baste with the juices that form in the baking dish a couple of times
Serve 4 portions
Note: Serve with roasted carrot sticks, melted butter.
