Preheat the oven to 200°C (hot)
In a large baking dish, mix together soy sauce, lime juice, ketchup, and grated ginger
Place the eel on top of this mixture and turn it so that it's well coated
Arrange the orange slices on top of the eel, cover with aluminum foil, and bake in the preheated oven until, when you spear a point of the eel with a fork, it falls apart into flakes (about 30 minutes)
