Cut the eel into fillets and make a bundle with each fillet, wrapping one raw shrimp
Next, prepare the following: place 3/4 of a bottle of white wine; 1 cup of water; a medium onion cut into pieces; three cloves of garlic; pepper; bay leaves; thyme; chives
Bring all ingredients to a boil
After being ready, strain it, leaving only the sauce
Season the fish bundles with lemon, garlic, pepper, nutmeg to taste and place them in the wine sauce next
Prepare separately, in a water bath: two tablespoons of flour dissolved in 1 cup of milk, two tablespoons of butter, two egg yolks, salt and pepper
Mix constantly until everything is combined, making a cream
After that, add 1/2 cup of Parmesan cheese and 1/2 cup well filled with cooked mushrooms
After the mixture has cooled, place it in a mold, carefully placing the bundles
Cover them with the cream and bake until golden
Note: mushrooms are optional.
