3 tablespoons of vegetable oil
1/2 cup of finely chopped onion
1 1/2 cups of pork loin, cut into strips
1 1/2 cups of chicken broth or more if needed
1/2 cup of finely chopped salted pork fat
1 cup of sliced mushrooms
2 tablespoons of cornstarch
1 pinch of black pepper
to taste: salt and pepper
1 1/2 tablespoons of soy sauce
2 tablespoons of water
3 tablespoons of vegetable oil

Fry the vegetable oil and cook the onion until it's translucent
Combine chicken broth, scallions, salted pork fat, and mushrooms
Let it simmer for about 25 minutes, adding more broth if needed
Mix cornstarch, black pepper, soy sauce, water, and salt to taste
Add the mixture to the pan and let it simmer, stirring until it thickens
Check the seasoning and serve with rice.
