Mince the garlic and insert it into the meat, then season with salt and pepper
Place the meat in a baking dish
Add the butter or margarine
Combine the thyme, lime juice, and beer
Moisten slightly and place over the meat in small ladlings
Sprinkle with dark brown sugar
Preheat the oven to hot (200°C)
Bake the meat for 20 minutes
Lower the temperature to moderate (170°C) and bake moistening frequently with the liquid from the baking dish (about 1 1/2 hours or until the meat is tender and golden)
If it dries out too much, add a little hot water
