In a large saucepan, place the pork loin and add all the ingredients
Simmer over low heat for at least 1 hour, or until the meat is tender
Once the meat has almost absorbed all the liquid, remove the pan from the heat and slice the meat into thin strips
Place the slices in a warmed serving dish, slightly overlapping, and spoon the sauce, strained, over the top
Serve with vegetables and mashed potatoes
If desired, serve chilled
