1 pork chops
4 crushed garlic cloves
Salt and black pepper to taste
1/2 tablespoon cornmeal oil
Star anise (optional)

200g farina de milho
1 tablespoon cornmeal oil
Small chopped onion
Chopped parsley and salt to taste

Pork Chops
Season the pork chops with salt, black pepper, and garlic
Let it sit overnight to allow the flavors to meld
In a large skillet, heat the oil over medium heat
If desired, add star anise and sauté the pork chops
Add cold water to cover the pork chops and simmer for 1 hour, watching to prevent the water from boiling away
If needed, add a little more water
Remove the pork chops from the skillet and place them in a refractory dish
Cover with some of the remaining sauce and bake in a low oven for another half hour
Reserve the remaining sauce to make the Farofa
Farofa
In a medium skillet, sauté the onion in hot oil
Add salt to taste and, over low heat, gradually add the farina and the pork chops' leftover sauce, stirring constantly to prevent burning
Garnish with chopped parsley.
