Massage the leg of goat with salt and black pepper to taste
Place it in a baking dish and drizzle the olive oil over the meat
Put it in a hot oven (400°F) and roast, calculating 1 hour per pound
Remove from the oven and sprinkle with breadcrumbs and parsley
Douse well with the fat from the baking dish and put back in the oven
Roast for another 20 minutes, frequently basting the meat with the fat from the baking dish
Serve with lemon wedges, accompanied by rice
