1/4 cup of olive oil
A large onion, finely chopped
3 cloves of garlic, minced
3 diced tomatoes with seeds removed
4 tablespoons of lime juice
A green pepper, finely chopped
500g of siri meat
1/4 cup of chopped coriander
One finger-length pimenta dedo-de-moça, finely chopped
5 eggs, separated
To taste salt

In a frying pan with the olive oil, sauté the onion and garlic until they're soft
Add the tomato, lime juice, green pepper, and siri meat
Stir well
Sauté for 5 minutes over high heat, stirring occasionally
Add the coriander, pimenta dedo-de-moça, and salt
Mix well
Beat the egg whites until frothy, then add the yolks and beat until smooth
Place the siri mixture in a baking dish and top with the beaten eggs
Bake in a moderate oven (180°C) that's been preheated until lightly golden
Serve immediately
