Pork Loin:

In a bowl, mix the onion and lime juice, then season with salt and black pepper
Place the pork loin and marinate it in the mixture
Let it rest for three hours, flipping the meat occasionally
Make small incisions on the meat to allow the marinade to penetrate

Transfer the meat to a baking dish and arrange the bacon on top
Cover with aluminum foil
Bake at high temperature for two hours
Remove the foil and let it brown until cooked through
Serve with farofa and lime wedges
Farofa:
In a skillet, sauté the onion in half of the butter
Add the scallions and black pepper
Add the garlic and stir-fry
Add the remaining butter, stirring slowly to combine
Serve.
