Season the pork loin with salt and make a long incision down the center
Mix the brown sugar with the mustard and wheat flour, then fill the pork loin, leaving some for the outside
Place in a greased baking dish
Arrange the onion rings mixed with the brown sugar, vinegar, and olive oil around the pork loin
Bake at 350°F (180°C) for about 1 hour or until the meat is tender
Remove from oven and let stand
Use a spatula to remove the onions from the baking dish and place on top of the pork loin
Heat the remaining sauce over medium heat with the cornstarch, whisking constantly, until smooth
Remove from heat and place around the pork loin
Serves 8.
