Wash and cut the okra into thick slices
Place in a bowl and cover with water
Add lime juice and let it rest for 30 minutes
Meanwhile, heat olive oil and sauté the chopped onion and garlic
Add the pork loin and season with salt and black pepper
Brown the meat on all sides
Add tomato sauce, vinegar, and white wine and simmer until the meat is tender. Reserve
Drain and dry the okra in paper towels
Transfer to a pan and add enough cold water to cover the okra
Simmer until the okra is soft and place it in the pork loin pan
Gently stir and adjust seasoning
Serve immediately with rice and farofa.
