1 kg of pork loin
4 or 5 slices of bread, soaked in milk and passed through a fine-mesh sieve
5 egg yolks
100 g of chopped green olives
100 g of finely chopped prosciutto or ground to a paste in a food processor
1 1/2 cups grated cheese
100 g of pitted black plums
1 pepper, pimenta malagueta, and black pepper
1 finely chopped onion
1 kg of pork loin

Cut the pork loin in half lengthwise with a sharp knife
Season with salt and garlic
Combine the remaining ingredients and stuff the pork loin
Roll up like a rolatine
Secure with kitchen twine and place on a baking sheet lined with parchment paper
Add slices of bacon on top of the pork loin
Bake in a moderate oven
Don't forget to remove the kitchen twine before serving.
