1 package of macaroni, type spaghetti or fettuccine
1 minced garlic clove
2 tablespoons olive oil
5 chopped bell peppers
1 yellow pepper, diced
1 red pepper, diced
1 green pepper, diced
1 diced eggplant
1 cup sliced mushrooms
Salt, chopped parsley, and grated cheese to taste
1 package of macaroni, type spaghetti or fettuccine

Cook the macaroni according to the manufacturer's instructions
While that's cooking, sauté the garlic in heated olive oil
Add the bell peppers and stir until tender
Add the yellow, red, and green peppers and cook for two minutes
Add the eggplant and stir for one minute
Add the mushrooms and cook for two more minutes, seasoning with salt and parsley
Drain the macaroni and reserve three tablespoons of cooking liquid
Combine the macaroni with the sautéed vegetables and add the reserved liquid
Serve immediately with grated cheese to taste.
