Wash the spinach leaves, dry them well, and chop into fine strips
In a pan, melt the butter and sauté the onion
Add the Italian sausage and stir occasionally until it's fully incorporated
Mix in the chopped spinach, season with salt and pepper to taste
Simmer for 1 minute over low heat
Cook the pasta in abundant boiling water with salt until al dente
Drain the pasta, mix in the sauce, and sprinkle shredded cheese.
