1 bunch of escarole
6 tablespoons of olive oil
2 cloves of garlic, minced
2 carrots, cut into cubes
1 cup of ricotta cheese
3 tablespoons of grated Parmesan cheese
Salt and pepper to taste
8 slices of beef strip loin
8 cups of tomato sauce
1 package of 500g macaroni
1 bunch of escarole

Step 1: Wash and dry the escarole leaves
Cut into fine strips
Step 2: Heat two tablespoons of olive oil in a pan, sauté the garlic until fragrant, then turn off the heat
Step 3: Mix together the escarole, carrots, ricotta cheese, and Parmesan cheese
Season with salt and pepper to taste
Step 4: Temp the beef slices with salt
Place a portion of the filling on each slice and roll up
Secure with toothpicks
Step 5: Heat the remaining olive oil in a pan and sear the rolled beef slices on both sides
Step 6: Add the tomato sauce and let it simmer for 40 minutes, covered, at low heat
Serve the cooked macaroni with the brasas.
