Cut the avocados in half and pit
Squeeze with lemon juice and sprinkle with 1/2 tablespoon of salt
Melt the butter, add flour, mix well, and season with salt and pepper
Add milk gradually, stirring until it thickens
Combine the chicken or lobster
Stuff each avocado half with two slices of cheese in a cross shape
Place on a baking dish and surround with water (water should be 1 cm deep)
Bake at moderate heat for 15 minutes
Serve hot every 6 portions.
