For the mango puree, chop the fruit and blend it in a blender
Then, heat it with 100 grams of sugar until it thickens slightly
Next, prepare the melon puree by chopping the fruit into small pieces and blending it in a blender
Heat it with 100 grams of sugar until it's fully cooked
Step 2
Arrange the pineapple cubes on a plate
Sprinkle granulated sugar over them and caramelize with a blowtorch
Serve the purees alongside
If you don't have a blowtorch, heat 200 grams of granulated sugar in a saucepan until it caramelizes
Pour it over the pineapple cubes.
