Peel the mamao and cut into slices
Cut those slices in half so that the pieces are the same size as fried potato slices
Place them in a bowl with water and salt, and let them rest for 1/2 hour
Meanwhile, put plenty of oil in a frying pan and let it get very hot
When the oil is hot, add the slices, 2 or 3 at a time, and let them fry until they are lightly golden
Let them drain on paper towels
Beat the 3 egg whites into foam, season to taste
Add chopped parsley
Finally, add the yolks
Take the frying pan with the mamao slices and eggs and place it over low heat
Add the eggs and let them cook
Then, flip everything onto a serving platter
If you want, you can also make a separate omelette and serve it on top of the mamao
