1 cup of bread flour for kibbeh
1 3/4 cups of chopped fresh parsley
1/2 cup of chopped fresh cilantro
1/4 cup of chopped green onion
2 tablespoons of finely chopped onion
1 large ripe tomato, peeled and seeded, diced
1/4 cup of freshly squeezed lime juice
1/4 cup of olive oil
salt and black pepper to taste
1 cinnamon stick
2 papaya peels
lettuce leaves
1 cup of bread flour for kibbeh

Wash the bread flour and place it in a large bowl
Add hot water sufficient to cover and let it rest for 40 minutes
Drain well and squeeze dry
Place in a large bowl and add parsley, cilantro, green onion, onion, and tomato
Mix well and reserve
Beat lime juice, olive oil, salt, black pepper, and cinnamon until thickened slightly
Pour over the ingredients in the bowl and mix carefully
Cut the papaya peels in half lengthwise and remove the seeds
Arrange each half on a lettuce leaf and fill with tabule.
