Cut the yucca into 6 equal pieces and wrap each with a strip of smoked bacon, securing with a toothpick
Grease a refractory baking dish and place sliced tomatoes at the bottom
Arrange the yucca pieces with bacon on top of the tomatoes, season with salt and black pepper, and drizzle with olive oil
Roast in a moderate oven (170°C) for about 10 minutes or more, until the smoked bacon is cooked to your liking.
