Peel the mangoes, remove the pits and cut them into large slices
Bring the water, wine, lime juice, and sugar to a boil, then reduce heat and let simmer until the sugar dissolves
Add the mango pieces and cook until they're tender but still hold their shape
Let it cool, serve chilled with the calda sauce (or warm it up if you prefer)
