2 envelopes of unsweetened gelatin
1/2 cup of cold water
2 cups of sugar
2 tablespoons of Karo syrup
1 cup of hot water
2 egg whites beaten to snow-like consistency
1 tablespoon of vanilla extract
pistachios or roasted hazelnuts chopped or toasted coconut flakes
2 envelopes of unsweetened gelatin

Melt the gelatin in a large bowl with cold water
Set aside
In a separate saucepan, combine the sugar, Karo syrup, and hot water
Bring to a medium heat until it reaches a molten consistency
Pour this mixture over the gelatin, stirring constantly, until it starts to thicken
Add the beaten egg whites and vanilla extract, mixing carefully
Pour into a baking dish and let cool
When firm, cut into small squares with a wet knife
Finally, coat the squares in chopped pistachios or roasted hazelnuts (or toasted coconut flakes).
