In a saucepan, heat the sugar with the water until it dissolves
Let it come to a boil and cook without stirring until it reaches the thread stage
Remove from heat and beat until the syrup becomes slightly turbid
Add the ground almonds (or cashews)
Add the egg whites and cook over low heat for 2 to 3 minutes, or until the mixture starts to detach from the sides of the saucepan
Place the mixture on a lightly powdered surface with confectioner's sugar
Let it cool slightly and knead well, adding the remaining confectioner's sugar
Shape into desired form
This mixture can be used to fill black plums and make bonbons.
