Soak the gelatin in cold water for 25 minutes
Beat the egg yolks with 8 tablespoons of sugar and set aside
Warm the remaining milk, combine it with the soaked gelatin, egg yolks, and mix well
Cook over low heat, stirring constantly, until thickened
Let cool
Beat the egg whites until frothy, add the remaining sugar and beat again
Fold the egg whites into the cooled pudding, adding orange extract and coloring
Pour into a wet mold, refrigerate until firm
Unmold and serve with slices of oranges.
