Preheat the oven to 350°F (medium-high)
In a medium bowl, place the all-purpose flour and make a depression in the center
Add the remaining ingredients and mix well with a fork
Knead with your hands until you get a homogeneous dough
Divide it into three equal parts
With 2/3 of it, line an ungreased cake pan that is 25 cm in diameter by pressing with the tip of your fingers
Trim the edges of the dough with a knife and fill
Roll out the remaining dough on a floured surface
Cover the filling with the dough, pressing the edges to close the cake well
Mix the egg yolk with coffee and brush the surface of the dough
Put it in the preheated oven until it's golden (about 35 minutes)
