Preheat the oven to 180°C (medium)
In a medium bowl, place the all-purpose flour and create a depression in the center
Add the remaining ingredients and mix well with a fork
Knead by hand until you get a homogeneous dough
Divide it into three equal parts
With 2/3 of it, line a cake pan with a diameter of 25 cm, pressing with your fingertips
Trim the edges of the dough with a knife and fill it
With a rolling pin, roll out the remaining dough on a surface dusted with all-purpose flour
Cover the filling with the dough, pressing the edges to close the cake well
Mix the egg yolk with the coffee and brush the surface of the dough
Put it in the preheated oven until golden (about 35 minutes)
