Mix the flour, sugar, and yeast in a bowl
Add the cold butter to the mixture, cutting it into small pieces
Gradually add the water while kneading the dough
Shape the dough and place it in an 8-10 inch springform pan or refractory dish
Press the dough evenly around the edges of the pan
Finish the top with a crust
Poke the dough with a fork
Line the dough with aluminum foil or parchment paper
Fill with beans to weigh down, making it easier to slice
Bake in a moderate oven preheated to 180°C for about 15 minutes
Remove the foil and finish baking until golden brown
Cool completely before slicing into 12 pieces.
