1 Preheat the oven to 200°C
Season the medallions with salt, pepper, and lemon juice
2 Wrap the medallions with zucchini and bacon slices
Secure with twine
3 Place in a baking dish, cover with aluminum foil, and bake for approximately 25 minutes
4 Remove the aluminum foil, twine, and let it brown
Serve with grilled tomatoes and onions sprinkled with salsa.
