Mixture: 500g of wheat flour, 250g of butter, 2 egg yolks, 1 whole egg, 4 tablespoons of grated Parmesan cheese, 2 tablets of active dry yeast, 3 tablespoons of buttermilk, 1 cup of milk
Filling: 300g of ricotta cheese passed through a sieve, 6 tablespoons of grated Parmesan cheese, 150g of chopped apple and candied orange peel

Melt the yeast in warm milk
Add 2 tablespoons of wheat flour
Mix well and let rise
In a separate bowl, mix together butter, eggs, Parmesan cheese, flour, and buttermilk
Finally add the risen yeast
Don't overmix the dough
Let it rise for 1 hour
Roll out the dough to about 3mm thick, always dusting with flour
Cut into shapes, fill, fold or cut into squares, fill, and roll
Place in a greased baking dish and let rise
Brush with egg wash and bake
After baking, dust with Parmesan cheese
