Mix the sugar, water, and salt in a saucepan and heat over medium stirring until the sugar dissolves
Cook without stirring until it reaches the soft-ball stage
Beat the egg whites in a snow-like consistency until stiff peaks form
Add the hot syrup to the egg whites slowly while beating continuously
Add the vanilla and beat until stiff peaks form again
Pipe into petit fours as desired.
