Cook the whole cod with water, salt, and lime juice for one hour or until, when spearing with a fork, the meat falls apart in flakes
Drain
Place on a platter and beside it arrange the mayonnaise
Decorate the eyes with olives and, in the mouth of the fish, place a sprig of parsley
If desired, place small tomato flower arrangements over the mayonnaise.
