Grill the eggplant and zucchini in a non-stick skillet with olive oil
Make a stack, alternating slices of eggplant and zucchini
Sprinkle with Parmesan and place on an open Ciabatta bread
Put it in the oven for 10 minutes
Add radicchio leaves seasoned with salt and a drizzle of olive oil
Close the sandwich and serve immediately
