Boil the sweet potatoes in water for 7 minutes after bringing to a boil
Drain, let cool and grate using the coarse side of a grater
Mix together the sweet potato, mozzarella cheese, salt, and cilantro

In a small non-stick skillet, place one portion of the mixture
Shape into a crepe with a spatula and cook over medium heat on both sides
Repeat the process with the remaining mixture
Place a portion of cream cheese on each crepe, fold, and serve immediately.
