Slice the cucumber into thin rounds and sprinkle with salt. Reserve

Cut the buns in half and spread mayonnaise on one side
Place a slice of beef, a roundel of cucumber, and a dollop of jalapeño gelée on each bun
Close the sandwiches
Skewer them with wooden skewers and garnish with pickle relish
Serve immediately.
