Lave the miolo under cold running water, then remove any membranes or veins with a sharp knife
Rinse the miolo again to remove any remaining blood
Place the miolo in a pot, cover it with cold water, and add 2 tablespoons of lime juice or vinegar
Then add the small onion and salt to taste
Bring the mixture to a simmer over medium heat and cook for about 10 minutes, or until the miolo is tender
Let the miolo cool, then cut it into thick slices that are not too fine
Dry the miolo with paper towels, coat it in seasoned wheat flour, and then dip it in the beaten eggs
Fry the miolo in hot oil until golden brown
Serve 6 portions.
