Combine the white wine, vinegar, onion, and paprika in a saucepan
Cook rapidly until almost all the liquid has evaporated
Heat the butter in a small saucepan until it bubbles but does not burn
Place the egg yolks, lemon juice, salt, and pepper in the blender cup
Tame, lock, and blend at high speed
Remove the lid, lock, and blend at high speed while gradually adding the butter
Add the onion mixture, tame, and blend at high speed for 4 seconds
Prepare approximately 3/4 cup of sauce.
